Have you ever wanted something sweet but didn’t really feel like getting into baking – especially late at night? (Who am I kidding, those of us addicted to baking can do it anytime anyplace! ) I happen to have a go-to recipe that I love to put together when I want a great, sweet, snack. It doesn’t dirty up hardly any dishes and I always seem to have all of the ingredients on-hand. It doesn’t hurt that this snack has some health benefits too!
No Bake Chocolate Bites
- 4 TBSP Crunchy Peanut Butter
- 2 C Instant Oats
- 4 TBSP Cocoa Powder
- 3/4 C Sugar (Granulated)
- 1/2 C Powdered Sugar
- 1/4 C Butter (Softened/Melted)
- 1 TSP Vanilla
In a large mixing bowl, combine oats, cocoa, and granulated sugar. After mixed, add softened/melted butter, vanilla, and peanut butter. Mix thoroughly, until all ingredients are no longer dry. If the mix is too dry still, add water – 1 TBSP at a time, and mix after each added TBSP. Once the mix is at a consistency for handling, take a portion of the mix at a time and roll into 1 inch (or larger) balls. Place the powdered sugar into a shallow dish or plate and roll the balls in the sugar until fully covered. Repeat the rolling until all mix is used. Place the bites onto a dish and refrigerate until cold (at least 20 minutes). Once cooled, enjoy! **These may also be consumed immediately but I have found that once cooled in the fridge, they taste and hold much better!**
– You can use creamy peanut butter for a less crunchy taste, or even almond butter for added health!
– Add dried fruit into the mix before rolling
– Instead of rolling into balls, place into a small (non-stick) bread loaf pan and slice into pieces once firm
